White chocolate not only adds flavor to savory dishes but also makes a cheese sauce shine. Mac' n Cheese is a favorite seasonal dish this year though, why not make it a White Christmas?

Ingredients

  • Salt (as needed)
  • 8 ounces large elbow macaroni
  • 2 cups whole milk
  • 1 cup half-and-half
  • ¼ tsp freshly grated nutmeg
  • 1 tsp freshly cracked black pepper
  • 1 cup white chocolate chips
  • 6 tbsp butter (divided)
  • 2 tbsp sage leaves (chopped)
  • ¼ cup all-purpose flour
  • 8 ounces brie (chopped)
  • 8 ounces sharp white Cheddar
  • 1 tsp salt
  • 4 ounces fresh Parmesan (shaved, to garnish)

Method

  1. In a large pot, bring liberally salted water to a boil. Add the macaroni and cook according to the package directions, and until al dente. Strain well and rinse under cold running water. Wipe the pot clean with kitchen paper.
  2. In a small pan, set over low heat, heat the milk with the half-and-half, nutmeg, and black pepper for 7-10 minutes, or until small bubbles start to form.
  3. Next, add the white chocolate chips, and stir well until entirely melted. Turn the heat off but allow the pan to remain on the stovetop.
  4. In the meantime, in a second small pan set over moderate heat, melt 2 tablespoons of butter. When the butter begins to foam, add the chopped sage and cook until the butter becomes golden and the sage crisps. Turn the heat off but allow the pan to remain on the stovetop.
  5. In the same pot used in Step 1, over low heat, melt the remaining butter. Add the flour and whisk continually for 2 minutes until smooth paste forms. Gradually, in ¼ cupful amounts, stir in the milk mixture. Stir well with each addition to prevent lumps from forming. Cook while stirring for an additional 1-2 minutes until the sauce is thickened and smooth.
  6. Next, add the brie followed by the Cheddar and whisk until melted into the sage.
  7. Stir in the sage brown butter from Step 4 and season with salt. Add the pasta and continue to cook until the mixture is simmering and heated through.
  8. Scatter over the Parmesan and serve.
