- 1 scoop almond milk ice cream
- One shot/1fl oz (25ml) of espresso
- Pour 1fl oz (25ml) almond milk into a small glass. Top with 1 scoop almond milk ice cream.
- Brew one shot/1fl oz (25ml) of espresso into a small pitcher. Pour it over the ice cream.
- Sprinkle over 1⁄2 teaspoon cinnamon and 1 teaspoon chopped almonds, and serve.

Method
- In a saucepan over moderate heat, bring the milk to a simmer.

- 7 ounces white chocolate (chopped)
- ½ cup cream
- 1½ ounces butter
- 2 (10½ ounce) store-bought chocolate Swiss roll
- Shredded coconut (to decorate)
- Red and green mixed jellies and candy balls (to decorate)
Method
- In a small pan, combine the white chocolate with cream and butter, and over low heat, while stirring, melt.
- Remove the pan from the heat and stir well until silky smooth. Put to one side at room temperature until cooled. Using electric beaters, beat until stiff peaks begin to form.
- Cut one end of the Swiss roll at a 45° angle and cut one end of the other roll at a slightly deeper angle. Set the cut pieces aside to symbolize 'twigs.' Join the rolls together using their flat sends, with a small amount the white chocolate buttercream.
- Using the white chocolate cream, attach the 'twigs' to the log. Spread the remaining cream over the log, leaving the ends uncovered.
- Decorate with shredded coconut and arrange the mixed jellies and candies around the log cake.

- 1½ cups butter (cubed)
- ¾ cup water
- 4 ounces white baking chocolate (chopped)
- 1½ cups buttermilk
- 4 large eggs
- 1 tsp vanilla extract
- ¼ tsp rum extract
- 3½ cups all-purpose flour (divided)
- 1 cup toasted pecans (chopped)
- 2¼ cups sugar
- 1½ tsp baking soda
- White Chocolate Cream Frosting:
- 4 ounces white baking chocolate (chopped)
- 11 ounces cream cheese (softened)
- ½ cup butter (softened)
- 1 tsp vanilla extract
- ¼ tsp rum extract
- 6 cups confectioner's sugar
- 1 cup seedless raspberry jam (divided)
Method
- Preheat the main oven to 350 degrees F.
- In a large pan, combine the butter, water, and white baking chocolate. Cook while stirring over low heat until entirely melted. Remove the pan from the heat, and stir in the buttermilk followed by the eggs, vanilla extract, and rum extract.
- In a bowl, combine ½ cup of flour with the pecans.
- In a larger bowl, combine sugar with the baking soda and the remaining flour. Then, a little at a time beat in the butter mixture and stir in the pecan mixture.
- Grease and flour three (9") circular baking pans.
- Spoon the mixture into the prepared pans, and bake for 25-30 minutes, or until springy to the touch. Allow to cool in the pans for 10 minutes before removing them to wire baking racks to cool completely.
- Add the white chocolate cream frosting to a microwave-safe bowl, melt the chocolate, stirring until silky smooth. Allow the frosting to cool while occasionally stirring for 10 minutes.
- In a mixing bowl, beat the cream cheese with the butter. A little at a time beat in the melted white chocolate, vanilla, and rum extracts. Gradually beat in the confectioner's sugar until smooth.
- When you are ready to assemble, spread 2 tablespoons of raspberry jam over one of the cake's layers, followed by ½ cup of the frosting. Repeat the layers another two times. Spread the remaining frosting over the top and sides of the torte. Warm any remaining raspberry jam, and drizzle it over the dessert plates. Top each plate with a slice of torte.

- ¾ cup brown sugar

- 2 cups plain flour
- 6⅓ ounces good-quality white chocolate (chopped)
- Confectioner's sugar (to dust)
Method
- Preheat the main oven to 355 degrees F. Grease and using line an 8x11" slice pan.
- Add the butter, golden syrup, brown sugar, ground ginger, and cinnamon to a pan. Over moderate heat, and while stirring, melt the butter for 2-3 minutes, until the mixture is smooth and combined.
- Remove the pan from the heat and allow it to cool slightly. Add the lightly beaten eggs and milk and stir to combine.
- Into a large bowl, sift the flour, and add the white chocolate. Fold through the egg mixture and mix until incorporated. Transfer the mixture to the prepared slice pan.
- Transfer the pan to the preheated oven for 30- 35 minutes, until firm. Allow to cool completely in the pan.
- Dust with confectioner's sugar and slice into 18 even fingers.

- 1¾ ounces blanched almonds (coarsely chopped)
- 1¾ ounces blanched hazelnuts (coarsely chopped)
- 5 tbsp desiccated coconut (divided)
- 3 tbsp confectioner's sugar (divided)
- 2 ounces good-quality white chocolate
- 2½ ounces heavy cream
- Confectioner's sugar (as needed, for dusting)
Method
- Add the coarsely chopped almonds and hazelnuts to a food processor. Add 3 tablespoons of desiccated coconut and 1 tablespoon of confectioner's sugar. On the pulse setting, combine until the nuts are finely ground. Do not over-process, or else the nuts will become oily.
- Transfer the nuts to a bowl.
- Add the white chocolate to the food processor and chop finely. Add the chocolate to the bowl of nuts.
- In a pan, bring the heavy cream to a boil and pour it over the white chocolate and nut mixture, stirring well to combine. Transfer to the fridge to chill for 60 minutes.
- Sift 2 tablespoons of confectioner's sugar into a bowl. Stir in the remaining coconut.
- In teaspoonful amounts, scoop the mixture and roll into 24-26 even size balls.
- Next, roll the balls first in the coconut and then the sugar mixture. Repeat this process until all the balls are prepared.
- Arrange the balls in a single layer on a cookie sheet and place them in the fridge overnight to firm.
- The following day, dust in confectioner's sugar and place in an airtight container for up to 7 days.

- 6 cherries (washed and dried)
- 1 square white chocolate candy coating
- ½ tsp vegetable shortening
- Gold glitter edible sprinkles
- 12 ounces white chocolate chips
- ½ cup heavy cream
- ¾ cup Champagne
- 8 ounces cream cheese (softened)
- 18 graham cracker (crushed)

Method
- For the gold cherries: pour the sprinkles into a tiny bowl.
- In the microwave on half power, for 60 seconds, melt the white chocolate candy coating with the shortening. Continue to microwave in 20-second increments, still on half power, until the chocolate is melted.
- One at a time, dip the cherries into the melted white chocolate, allowing any excess to drip back into the bowl.
- Next, dip each coated cherry in the bowl of sprinkles, gently rotating and shaking to ensure even coverage. Set aside on a plate to set and harden.
- For the cheesecake: In a small pan, combine the white chocolate chips with cream over low heat. Cook, while occasionally stirring, until the chocolate chips are melted and smooth for around 10 minutes.
- When melted, take the pan off the heat and stir in the Champagne. Allow to cool while on the worktop for 15 minutes.
- Once cooled, combine the melted white chocolate and cream cheese in a bowl. Using an electric mixture, beat until lump-free and smooth. Transfer to the fridge for around 20 minutes.
- Add the crackers to two ziplock bags, and crush to a crumb consistency. When crusted, divide the crumbs between 6 shooter glasses.
- Transfer a small amount of the cheesecake mixture to a piping bag. Pipe the cheesecake into each shooter glass, refilling the bag as necessary.
- Cover with foil and transfer to the fridge until needed.
- When you are ready to serve, top each glass with a gold cherry.

- In the microwave in a bowl, melt the white chocolate for 1-2 minutes while stirring until melted and smooth.
- Cut the marshmallows and Turkish delight into small pieces, and add them to a bowl, followed by the dried cherries, macadamias, and pistachios.
- Pour the melted white chocolate over the marshmallow mix and stir to coat evenly.
- Spoon the mixture into the slice pan, and place in the fridge for 30 minutes to set.
- Turn out onto a cutting board, remove the baking paper, and slice into 24 even-sized squares.
