- 1 1/2 ounces (45 ml) hot, fresh espresso or strong coffee
- 1 1/2 ounces (45 ml) hazelnutflavored syrup
- 1 1/2 ounces (45 ml) vanillaflavored vodka
- 4 ounces (125 ml) crushed ice
- Whipped cream, for garnish
- Cocoa powder, for garnish
- Place the espresso, syrup, vodka, and ice in a cocktail shaker.
- Shake vigorously—the hot espresso will melt the ice and dilute all the ingredients rapidly, and the mixture should be nice and frothy.
- Strain into a chilled glass.
- Float the whipped cream on top.
- Garnish with cocoa powder in a “star-dusting” fashion.

- 1 1/2 ounces (45 ml) premium whiskey or rye
- 2 1/2 teaspoons (8.25 ml) real maple syrup
- 3/4 cup (176 ml) hot, fresh espresso or strong coffee
- 1/4 cup (30 ml) whipping cream (unwhipped), for garnish
- 1 candy cane, for garnish
- Combine the whiskey and 11/2 teaspoons (7 ml) of the maple syrup in a heated mug or cup.
- Fill the rest of the way with the coffee.
- In a small bowl, combine the whipping cream with the remaining 1 teaspoon (1.25 ml) maple syrup, and whip until soft peaks form.
- Spoon the flavored whipped cream on top of the coffee mixture.
- Top with the candy cane!

- 4 ounces (113 ml) eggnog
- 2 ounces (60 ml) hot, fresh espresso or strong coffee
- 1/2 ounce (15 ml) sambuca (optional)
- 1/2 ounce (15 ml) premium egg yolk liqueur (optional)
- Whipped cream, for garnish
- Ground cinnamon, for garnish
- Grated nutmeg, for garnish
- 1 cinnamon stick, for stirring
- Steam the eggnog until it has doubled in volume.
- Pour the eggnog into a tempered Christmas glass or mug.
- Gently pour the espresso down the side of the glass into the eggnog.
- If using the liqueurs, gently pour them into the finished beverage.
- Scoop a dollop of whipped cream onto the top.
- Dust with cinnamon and nutmeg.
- Serve immediately, with the cinnamon stick.

Method
- In a large jug, soak the chai tea bags in the boiling water for 5-6 minutes. Discard the tea bags.
- In a saucepan over moderately high heat, warm the skim milk until it is steaming.
- Add the white chocolate to a small bowl and pour over a quarter of the steaming milk. Stir well until the white chocolate melts into the milk. Pour the mixture into the pan of steaming milk along with the chai tea and vanilla extract.

Method
- First, prepare the syrup. Add the raspberries, lemon juice, and sugar to a saucepan over moderate heat. Bring the mixture to a boil and mash the raspberries as it cooks.
- Turn the heat down to a simmer and cook for 2-3 minutes. Take off the heat and strain the mixture through a sieve. Discard any solids. Set the syrup aside to cool.
- When the syrup is cool, prepare the milkshake. Add the ice cream, milk, melted white chocolate, and raspberry syrup to a blender and blitz until smooth.
- Pour the mixture into a tall glass. Garnish with a swirl of whipped cream and a few fresh raspberries.

- Yolks of 4 eggs
- 3½ ounces good quality white chocolate (roughly chopped)
- 2 tbsp brandy

Method
- In a saucepan over moderate heat, bring the milk to a simmer.
- Using a whisk, in the meantime, beat together the sugar and egg yolks until creamy and pale.
- While continually whisking, pour in the simmering milk until combined.
- Transfer the mixture to a clean saucepan and place over low heat. Cook for 10 minutes while stirring until the mixture starts to thicken. Take off the heat.

- 7 ounces white chocolate (chopped)
- ½ cup cream
- 1½ ounces butter
- 2 (10½ ounce) store-bought chocolate Swiss roll
- Shredded coconut (to decorate)
- Red and green mixed jellies and candy balls (to decorate)
Method
- In a small pan, combine the white chocolate with cream and butter, and over low heat, while stirring, melt.
- Remove the pan from the heat and stir well until silky smooth. Put to one side at room temperature until cooled. Using electric beaters, beat until stiff peaks begin to form.
- Cut one end of the Swiss roll at a 45° angle and cut one end of the other roll at a slightly deeper angle. Set the cut pieces aside to symbolize 'twigs.' Join the rolls together using their flat sends, with a small amount the white chocolate buttercream.
- Using the white chocolate cream, attach the 'twigs' to the log. Spread the remaining cream over the log, leaving the ends uncovered.
- Decorate with shredded coconut and arrange the mixed jellies and candies around the log cake.

- 1½ cups butter (cubed)
- ¾ cup water
- 4 ounces white baking chocolate (chopped)
- 1½ cups buttermilk
- 4 large eggs
- 1 tsp vanilla extract
- ¼ tsp rum extract
- 3½ cups all-purpose flour (divided)
- 1 cup toasted pecans (chopped)
- 2¼ cups sugar
- 1½ tsp baking soda
- White Chocolate Cream Frosting:
- 4 ounces white baking chocolate (chopped)
- 11 ounces cream cheese (softened)
- ½ cup butter (softened)
- 1 tsp vanilla extract
- ¼ tsp rum extract
- 6 cups confectioner's sugar
- 1 cup seedless raspberry jam (divided)
Method
- Preheat the main oven to 350 degrees F.
- In a large pan, combine the butter, water, and white baking chocolate. Cook while stirring over low heat until entirely melted. Remove the pan from the heat, and stir in the buttermilk followed by the eggs, vanilla extract, and rum extract.
- In a bowl, combine ½ cup of flour with the pecans.
- In a larger bowl, combine sugar with the baking soda and the remaining flour. Then, a little at a time beat in the butter mixture and stir in the pecan mixture.
- Grease and flour three (9") circular baking pans.
- Spoon the mixture into the prepared pans, and bake for 25-30 minutes, or until springy to the touch. Allow to cool in the pans for 10 minutes before removing them to wire baking racks to cool completely.
- Add the white chocolate cream frosting to a microwave-safe bowl, melt the chocolate, stirring until silky smooth. Allow the frosting to cool while occasionally stirring for 10 minutes.
- In a mixing bowl, beat the cream cheese with the butter. A little at a time beat in the melted white chocolate, vanilla, and rum extracts. Gradually beat in the confectioner's sugar until smooth.
- When you are ready to assemble, spread 2 tablespoons of raspberry jam over one of the cake's layers, followed by ½ cup of the frosting. Repeat the layers another two times. Spread the remaining frosting over the top and sides of the torte. Warm any remaining raspberry jam, and drizzle it over the dessert plates. Top each plate with a slice of torte.
