White Chocolate Baba Ghanoush

This Middle Eastern dish is a vegetarian favorite. Here, though, by adding white chocolate, it's elevated to new heights. Topped with a favorite seasonal fruit, pomegranate arils, it is the perfect party dish for celebrating your white Christmas!

Ingredients
- 8 cloves garlic (unpeeled)
- 4 medium eggplants (sliced lengthwise in half)
- ⅓ cup freshly squeezed lemon juice
- ⅔ cup tahini
- 4 ounces good-quality white chocolate (melted and cooled)
- 2 tbsp fresh parsley (finely chopped)
- 1½ tsp ground cumin
- 1½ tsp paprika
- Sea salt and freshly ground black pepper (to season)
- Pomegranate arils (to garnish)
- Pita (toasted, to serve)
Method
- Heat your broiler to high.
- Place the garlic and eggplants, skin side facing upwards, on a baking sheet lined with aluminum foil. Broil until tender and charred; this step will take around 40 minutes for the eggplant and 20 minutes for the garlic.
- Peel the garlic and peel the eggplants. Using a spoon, scoop out the eggplant flesh, and transfer it to a food blender or processor. Add the fresh lemon juice, tahini, white chocolate, 1 tablespoon of parsley, cumin, paprika. Season with salt and black pepper. Process to a puree.
- Transfer the puree to a dish, garnish with the remaining parsley and scatter over the pomegranate arils.
- Serve with toasted pita for dipping and enjoy.
