Ingredients

  • 8 cloves garlic (unpeeled)
  • 4 medium eggplants (sliced lengthwise in half)
  • ⅓ cup freshly squeezed lemon juice
  • ⅔ cup tahini
  • 4 ounces good-quality white chocolate (melted and cooled)
  • 2 tbsp fresh parsley (finely chopped)
  • 1½ tsp ground cumin
  • 1½ tsp paprika
  • Sea salt and freshly ground black pepper (to season)
  • Pomegranate arils (to garnish)
  • Pita (toasted, to serve)

Method

  1. Heat your broiler to high.
  2. Place the garlic and eggplants, skin side facing upwards, on a baking sheet lined with aluminum foil. Broil until tender and charred; this step will take around 40 minutes for the eggplant and 20 minutes for the garlic.
  3. Peel the garlic and peel the eggplants. Using a spoon, scoop out the eggplant flesh, and transfer it to a food blender or processor. Add the fresh lemon juice, tahini, white chocolate, 1 tablespoon of parsley, cumin, paprika. Season with salt and black pepper. Process to a puree.
  4. Transfer the puree to a dish, garnish with the remaining parsley and scatter over the pomegranate arils.
  5. Serve with toasted pita for dipping and enjoy.
