Candy Cane and White Chocolate Cracker Toffee

Ingredients
- 40 saltine crackers
- 1 cup unsalted butter
- 1 cup granulated sugar
- 11 ounces white chocolate chips
- ½ cup candy canes (crushed)
Method
- Preheat the main oven to 375 degrees F.
- Use the saltine crackers to line a 15x10x1" baking sheet and put it to one side.
- Over moderately high heat, in a small pan, melt the butter.
- Add the sugar and while constantly stirring, bring to rolling water. When the mixture comes to a boil, remove it from the heat.
- Pour the mixture over the crackers and transfer to the preheated oven for around 10 minutes, until the crackers are caramelized and browned.
- Scatter over the white chocolate chips, and set aside for 6-8 minutes, until melted.
- Using a spatula, spread the melted chocolate evenly over the saltine crackers, and scatter over the crushed candy cane.
- Allow the white chocolate to set and store in an airtight container for up to 4 days.
