Ingredients

  • 5¼ ounces gingernut snap biscuits
  • 7 ounces fresh cherries (divided)
  • ¼ cup cherry liqueur (divided)
  • 5¼ ounces amaretti biscuits (crushed)
  • 1 (14 ounces) can sweetened condensed milk
  • 1 pound and 2 ounces crème fraiche
  • 1 tsp vanilla bean paste
  • ⅓ cup crystallized ginger (chopped and divided)

Method

  1. Grease a 3x13" loaf cake pan. Line the base and sides with kitchen wrap.
  2. In a food blender, on the pulse setting, process the biscuits to a fine crumb consistency. Add the butter and process until combined.
  3. Press the crumbs into the bottom of the prepared pan and transfer them to the freezer while you make the ice cream.
  4. Transfer half of the cherries to the freezer for decoration. Remove the pits from the remaining cherry and coarsely chop. Place the cherries in a bowl, add 1 tablespoon of cherry liqueur, and ⅔ of the crushed amaretti. Set to one side.
  5. In a bowl and with an electric mixer, whisk the condensed milk with the crème fraiche, and remaining cherry liqueur until thickened, for about 5 minutes.
  6. Fold the cream mixture gently into the cherry mixture. Fold in vanilla bean paste and half of the ginger and pour over the biscuit base, flatten the surface. Cover tightly with kitchen wrap and transfer to the freezer for 6-8 hours, until firm.
  7. Remove the ice cream log from the pan and transfer it to a cold platter.
  8. Serve the log, topped with frozen cherries and remaining amaretti biscuits and chopped ginger.
