Christmas Crack

This moreish crunchy candy gets its name because it's totally addictive and is a perfect holiday party sweet snack. Be sure to make plenty; one piece most definitely won't be enough.

Ingredients
- 40 saltine crackers
- 1 cup dark brown sugar
- 1 cup unsalted butter
- 1 tbsp coconut oil
- 3 cups good-quality white chocolate chips
- Dried fruit and nut mix (chopped, as needed, for topping)
Method
- Preheat the main oven to 350 degrees F. Cover a baking tray with kitchen foil.
- Arrange the saltine crackers on the baking tray in a single layer. Fold up the sides of the kitchen foil to keep the crackers on the tray. Set to one side.
- In a saucepan over moderate heat, melt together the brown sugar and butter. Simmer the mixture for 5-6 minutes, stirring continually, then immediately pour over the crackers on the baking tray. Use a spatula to spread the mixture evenly over the crackers. Place the tray in the oven and bake for 5 minutes. Take out of the oven and set to one side.
- Melt together the coconut oil and white chocolate chips using a double boiler, stirring continually until melted and silky. Pour half of the melted white chocolate over the crackers and spread out evenly using a spatula. Allow to stand for one minute.
- Pour over the remaining white chocolate mixture and spread out evenly.
- Scatter over dried fruit and nuts if desired.
- Transfer to the refrigerator to chill and harden for 2 hours.
- Before serving, remove the foil and break the candy into smaller pieces.
