Ingredients

  • 40 saltine crackers
  • 1 cup dark brown sugar
  • 1 cup unsalted butter
  • 1 tbsp coconut oil
  • 3 cups good-quality white chocolate chips
  • Dried fruit and nut mix (chopped, as needed, for topping)

Method

  1. Preheat the main oven to 350 degrees F. Cover a baking tray with kitchen foil.
  2. Arrange the saltine crackers on the baking tray in a single layer. Fold up the sides of the kitchen foil to keep the crackers on the tray. Set to one side.
  3. In a saucepan over moderate heat, melt together the brown sugar and butter. Simmer the mixture for 5-6 minutes, stirring continually, then immediately pour over the crackers on the baking tray. Use a spatula to spread the mixture evenly over the crackers. Place the tray in the oven and bake for 5 minutes. Take out of the oven and set to one side.
  4. Melt together the coconut oil and white chocolate chips using a double boiler, stirring continually until melted and silky. Pour half of the melted white chocolate over the crackers and spread out evenly using a spatula. Allow to stand for one minute.
  5. Pour over the remaining white chocolate mixture and spread out evenly.
  6. Scatter over dried fruit and nuts if desired.
  7. Transfer to the refrigerator to chill and harden for 2 hours.
  8. Before serving, remove the foil and break the candy into smaller pieces.
