Ingredients
- 1 (14 ounces) packet plain Graham crackers (broken into large pieces)
- ½ cup pistachio kernels (roughly chopped)
- 1 cup shredded coconut (lightly toasted)
- 7 ounces butter (melted)
- ¼ cup caster sugar
- 8¾ ounces cream cheese (chopped, at room temperature)
- 4½ ounces butter (chopped, at room temperature)
- 1 cup confectioner's sugar
- 2 tsp orange rind (finely grated)
- 6⅓ ounces white chocolate (melted and cooled)
- 1¼ cups thickened cream (whipped)
- 5¼ ounces red glace cherries (roughly chopped)
Method
- Grease a 2x8x10" roasting pan. Line the base and sides using baking paper, allowing the baking paper to overhang on the two longest sides.
- In a food processor, combine the crackers, pistachio kernels, and shredded coconut and process to a coarse crumb consistency.
- Add the melted butter and sugar to the processor and process to combine.
- Transfer ⅔ of the cracker mixture to the prepared roasting pan. Using a flat-bottomed glass, press the mixture evenly over the base.
- Transfer to the fridge to chill for 30 minutes. Set the remaining ⅓ of the cracker mixture aside at room temperature.
- Beat the cream cheese with chopped butter, confectioner's sugar, and orange rind in a bowl until creamy and pale with electric beaters.
- A little at a time, add the white chocolate and beat until incorporated.
- Add the whipped cream and chopped cherries to the cream cheese mixture, folding in until combined thoroughly. Spread the mixture over the cracker base and smooth.
- Scatter over the remaining cracker mixture.
- Transfer the pan to the fridge for 4-8 hours to chill.
- Slice, serve, and enjoy.
