Cranberry and White Chocolate Mince Pies

Ingredients
- 10½ ounces mincemeat
- 3 tbsp cranberry sauce
- 3½ ounces dried cranberries
- Zest of 1 orange
- 2½ ounces white chocolate shavings
- 1 tbsp plain flour (for dusting)
- 13 ounces ready-rolled short crust pastry
- Yolk of 1 egg (beaten)
- 1 tbsp confectioner's sugar (for dusting)

Method
- Preheat the main oven to 390 degrees F.
- Combine the mincemeat with cranberry sauce, dried cranberries, orange zest, and white chocolate shavings in a glass bowl. Set the mixture aside in the fridge for a minimum of 30 minutes.
- Next, prepare the pastry. Lightly dust a clean work surface with flour. Lay the pastry out and roll it out. Using a snowflake pastry cutter, stamp out 12 shapes. Gently push the pastry into a 12-cup cupcake pan and transfer to the fridge for 10 minutes. Re-roll the remaining pastry and cut out 12 stars.
- Spoon the mincemeat mixture into the pastry cases and top with the remaining pastry stars.
- Brush the tops with egg yolk, shatter over sugar and bake in the oven for 15 minutes.
- Remove from the oven and allow to cool slightly.
- Serve the mince pies dusted lightly with confectioner's sugar.
