Frosted White Chocolate Cupcakes

Nothing says celebration quite like a soft, moist cupcake piped with lashings of buttery frosting. Leave these white chocolate cupcakes undecorated for a striking, minimal all-white look. Alternatively, let your family get creative with festive sprinkles and toppings for a more personal touch.

Ingredients
- 2 tsp baking powder
- 1⅛ cups all-purpose flour
- ½ tsp salt
- ½ cup granulated sugar
- 1 large egg
- ½ cup white chocolate (melted and cooled)
- ½ cup vegetable oil
- Scrapings of 1 vanilla bean
- ½ cup buttermilk
- 1 cup butter (at room temperature)
- 2 cups confectioner's sugar
- 1 cup white chocolate (melted and cooled)
- ¼ tsp salt
- Sprinkles and decorations (if desired, for topping)

Method
- Preheat the main oven to 350 degrees F. Line two 12-cup muffin tins with 16 cupcake liners. Set to one side.
- In a bowl, combine the baking powder, flour, and salt.
- To a second bowl, add the sugar and egg. Beat using an electric whisk for 2 minutes until creamy. Next, add the cooled melted white chocolate, vegetable oil, vanilla bean scrapings, buttermilk, and stir until combined and melted.
- In batches, add the dry ingredients to the wet mixture stirring until incorporated.
- Divide the batter between the cupcake liners, filling each two-thirds full. Place in the oven and bake for 18-20 minutes.
- Take out of the oven and allow to cool completely.
- In the meantime, prepare the frosting. Using an electric mixer, beat the butter for 5 minutes until creamy. Add the confectioner's sugar and continue to beat on low-medium speed until smooth.
- Add the melted and cooled white chocolate and salt and continue to mix until fluffy. Use the mixture to frost the cooled cupcakes.
- Decorate the cupcakes if desired.
- Store leftover cupcakes in an airtight container.
