Ingredients


    Cupcakes:

  • 2 tsp baking powder
  • 1⅛ cups all-purpose flour
  • ½ tsp salt
  • ½ cup granulated sugar
  • 1 large egg
  • ½ cup white chocolate (melted and cooled)
  • ½ cup vegetable oil
  • Scrapings of 1 vanilla bean
  • ½ cup buttermilk

  • Frosting:

  • 1 cup butter (at room temperature)
  • 2 cups confectioner's sugar
  • 1 cup white chocolate (melted and cooled)
  • ¼ tsp salt
  • Sprinkles and decorations (if desired, for topping)

Method

  1. Preheat the main oven to 350 degrees F. Line two 12-cup muffin tins with 16 cupcake liners. Set to one side.
  2. In a bowl, combine the baking powder, flour, and salt.
  3. To a second bowl, add the sugar and egg. Beat using an electric whisk for 2 minutes until creamy. Next, add the cooled melted white chocolate, vegetable oil, vanilla bean scrapings, buttermilk, and stir until combined and melted.
  4. In batches, add the dry ingredients to the wet mixture stirring until incorporated.
  5. Divide the batter between the cupcake liners, filling each two-thirds full. Place in the oven and bake for 18-20 minutes.
  6. Take out of the oven and allow to cool completely.
  7. In the meantime, prepare the frosting. Using an electric mixer, beat the butter for 5 minutes until creamy. Add the confectioner's sugar and continue to beat on low-medium speed until smooth.
  8. Add the melted and cooled white chocolate and salt and continue to mix until fluffy. Use the mixture to frost the cooled cupcakes.
  9. Decorate the cupcakes if desired.
  10. Store leftover cupcakes in an airtight container.
