Ingredients
- 8 ounces unsalted butter
- 8 ounces light brown sugar
- 4 medium eggs
- 7 ounces jarred mincemeat
- Zest of 1 orange
- 1¼ cups plain flour
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 7 ounces good-quality white chocolate
- 3½ ounces double cream
- White chocolate (grated, to garnish)
Icing:
Method
- Preheat the oven to 350 degrees F. Line and grease an 8" square brownie pan.
- In a bowl and using an electric mixer, beat the butter with the brown sugar until fluffy and light.
- A little at a time, one at a time, beat in the eggs, making sure each one is well combined before adding the next one.
- Next, add the mincemeat and orange zest, and beat once more for 2-3 seconds until combined.
- Sift in the flour, ground cinnamon, and nutmeg, and with a metal spoon, stir until mixed entirely. Transfer to the brownie pan and smooth over using the back of a spoon.
- Transfer the brownie pan to the oven and cook until springy to the touch, for 30-35 minutes.
- In the meantime, prepare the white chocolate icing. Add the chocolate to a large bowl.
- Pour the cream into a pan and bring to a boil. Take the pan off the heat and pour over the white chocolate. Stir until the chocolate has melted and is incorporated. Put to one side and allow to cool.
- Leave the traybake in the brownie pan to cool for 10 minutes. Then, transfer to a wire baking rack to cool completely.
- Spread the icing evenly over the top.
- Scatter the grated white chocolate over the top, and slice into squares.
