Purple Ube Iced Coffee

This funky, purple coffee is a great way to change up your iced coffee regime. The same old brown can get boring, but now you can enjoy coffee the Ube-way.

Ingredients

  • 5 drops of Ube extract
  • ½ cup milk
  • 2 tsp instant espresso coffee
  • 4 tsp hot water
  • 4 tsp sugar
  • 1 oz unsweetened coconut milk

  • Method

    1. Add 2 tsp sugar, 2 tsp water, and the entire coffee in a deep bowl or a cup.
    2. Beat the mixture on medium speed using an electric beater for 2 to 3 minutes. The coffee will become whipped and increase in size – it should triple – and turn foamy.
    3. To make the simple syrup, in a small bowl, combine the remaining 2 tbsp water with 2 tsp sugar and mix well. If the water has cooled, heat it again because it needs to be hot to make the syrup and melt the sugar.
    4. Take a coffee cup and add the Ube extract to the bottom. Then, add the coconut milk followed by syrup. Use a spoon to mix well.
    5. Add ice and keep adding till you fill the cup. Add the ½ cup milk and then top with the foamy espresso. Mix well once and serve.
    6. Drink up!
