Ingredients


    Cauliflower:

  • 4 cups cauliflower (cut into florets)
  • ½ onion (peeled and finely chopped)
  • 2 cups whole milk
  • 2 tbsp butter
  • Salt and black pepper (to season)

  • Shrimp:

  • ¼ cup onion (peeled and finely chopped)
  • ⅓ cup butter (divided)
  • 1 clove garlic (peeled and finely chopped)
  • 1 (¼") thick slice fresh ginger
  • ½ cup apple cider
  • 18 large shrimp
  • 8 ounces good-quality white chocolate (chopped)

Method

  1. In a large pot, bring the cauliflower, onion, and milk to a boil. Cover with a lid and simmer for around 15 minutes. Drain thoroughly.
  2. In a food blender, puree the cauliflower with the butter until silky smooth. Season the mixture with salt and black pepper and keep warm.
  3. For the shrimp, in a large frying pan, cook the onion in 1 tablespoon of butter.
  4. Add the garlic and ginger to the pan and cook for 60 seconds. Deglaze with apple cider and bring to a boil.
  5. Add the shrimp to the pan, and while covered, cook for around 2 minutes until the shrimp are cooked through. Using kitchen tongs, remove the seafood from the pan and keep warm.
  6. Using the same pan, add the remaining butter followed by the white chocolate, and reduce for around 60 seconds until slightly syrupy. Taste and adjust the seasoning.
  7. Serve the shrimp with the cauliflower mash, and top with white chocolate sauce.
