Shrimp with White Chocolate Sauce and Cauliflower Mash

Ingredients
- 4 cups cauliflower (cut into florets)
- ½ onion (peeled and finely chopped)
- 2 cups whole milk
- 2 tbsp butter
- Salt and black pepper (to season)
- ¼ cup onion (peeled and finely chopped)
- ⅓ cup butter (divided)
- 1 clove garlic (peeled and finely chopped)
- 1 (¼") thick slice fresh ginger
- ½ cup apple cider
- 18 large shrimp
- 8 ounces good-quality white chocolate (chopped)

Method
- In a large pot, bring the cauliflower, onion, and milk to a boil. Cover with a lid and simmer for around 15 minutes. Drain thoroughly.
- In a food blender, puree the cauliflower with the butter until silky smooth. Season the mixture with salt and black pepper and keep warm.
- For the shrimp, in a large frying pan, cook the onion in 1 tablespoon of butter.
- Add the garlic and ginger to the pan and cook for 60 seconds. Deglaze with apple cider and bring to a boil.
- Add the shrimp to the pan, and while covered, cook for around 2 minutes until the shrimp are cooked through. Using kitchen tongs, remove the seafood from the pan and keep warm.
- Using the same pan, add the remaining butter followed by the white chocolate, and reduce for around 60 seconds until slightly syrupy. Taste and adjust the seasoning.
- Serve the shrimp with the cauliflower mash, and top with white chocolate sauce.
