Peppermint White Choc Chip Cookies

It wouldn't be Christmas without some peppermint-flavored sweet treats. All the family can enjoy these peppermint white choc chips. What's more, make an ideal edible gift for relatives, teachers, party guests, or even Santa!

Ingredients
- 1¼ cups all-purpose flour
- Pinch salt
- Pinch baking powder
- ¼ tsp bicarb of soda
- ½ cup unsalted butter (softened)
- ½ cup + 1 tbsp granulated sugar
- 1 egg (at room temperature)
- ½ tsp vanilla extract
- ¼ tsp peppermint extract
- ½ cup candy canes (crushed)
- ¾ cup white chocolate chips
Method
- Preheat the main oven to 350 degrees F. Cover a cookie sheet with parchment.
- In a bowl, combine the all-purpose flour, salt, baking powder, and bicarb of soda.
- Using an electric mixer, beat the butter together with the granulated sugar until fluffy. Add the egg and extracts. In batches, add the dry ingredients to the wet mixture and mix until combined.
- Fold in the crushed candy canes and white chocolate chips.
- Taking 2 tbsp of mixture at a time, drop the cookie dough onto the prepared cookie sheet.
- Chill the dough on the cookie sheet for 10 minutes in the refrigerator before transferring to the oven and cooking for 6-7 minutes.
- Take the cookies out of the oven and allow to cool completely before serving.
