Ingredients
- 9 ounces white chocolate chips
- 1¾ cups heavy cream (divided)
- Pinch of salt
- 1 tsp orange extract
- 2 tbsp orange zest
- 2 tsp powdered unflavored gelatin
- 2 tbsp cold water
- 1 cup jarred or homemade* wholeberry cranberry sauce
- ¼ cup fresh orange juice
- Candied orange peel (if desired, to garnish)
Method
- Combine the white choc chips, ¾ cup cream, salt, and orange extract in a microwave-safe bowl. Heat in the microwave in 30-second intervals, often stirring, until the white chocolate is melted and smooth. Transfer the mixture to a large bowl.
- Stir the orange zest into the cream. Set aside and allow to cool to room temperature.
- While the chocolate cools, combine the gelatin and cold water in a small bowl and whisk to combine. Heat the mixture in the microwave for 15-20 seconds until melted.
- Whisk the melted gelatin into the cooled white chocolate mixture until combined.
- Pour the remaining heavy cream into a bowl and whisk until it can hold stiff peaks. Fold half of the cream into the white chocolate mixture. When it is incorporated, fold in the remaining whipped cream.
- Divide the mixture between serving cups or ramekins. Chill for 2 hours in the refrigerator until set.
- Add the cranberry sauce and orange juice to a blender and pulse until it is smoother, but with some chunks remaining. Spoon a little of the mixture on top of the mousses and garnish with a piece of candied orange peel if desired. Keep chilled until ready to serve. *Ideally, not from a can.
