Ingredients

  • 3 cups whole milk
  • ⅓ cup caster sugar
  • Yolks of 4 eggs
  • 3½ ounces good quality white chocolate (roughly chopped)
  • 2 tbsp brandy
  • Mini marshmallows (as desired, for topping)

Method

  1. In a saucepan over moderate heat, bring the milk to a simmer.
  2. Using a whisk, in the meantime, beat together the sugar and egg yolks until creamy and pale.
  3. While continually whisking, pour in the simmering milk until combined.
  4. Transfer the mixture to a clean saucepan and place over low heat. Cook for 10 minutes while stirring until the mixture starts to thicken. Take off the heat.
  5. Add in the chopped white chocolate, stir well until the chocolate melts and is incorporated. Finally, stir in the brandy.
  6. Divide the mixture between serving cups and garnish with mini marshmallows.
  7. Serve and enjoy!
