Marshmallow White Chocolate Eggnog

Can eggnog get any better? Just wait until you try this boozy homemade tipple with brandy, white chocolate, and a melting marshmallow topping!

Ingredients
- 3 cups whole milk
- ⅓ cup caster sugar
- Yolks of 4 eggs
- 3½ ounces good quality white chocolate (roughly chopped)
- 2 tbsp brandy
- Mini marshmallows (as desired, for topping)
Method
- In a saucepan over moderate heat, bring the milk to a simmer.
- Using a whisk, in the meantime, beat together the sugar and egg yolks until creamy and pale.
- While continually whisking, pour in the simmering milk until combined.
- Transfer the mixture to a clean saucepan and place over low heat. Cook for 10 minutes while stirring until the mixture starts to thicken. Take off the heat.
- Add in the chopped white chocolate, stir well until the chocolate melts and is incorporated. Finally, stir in the brandy.
- Divide the mixture between serving cups and garnish with mini marshmallows.
- Serve and enjoy!
