How do you make coffee creamy without milk or cream? The Cubans have the espuma to prove. This method of making coffee enriches the texture of the drink for a smooth and yummy feel.

Ingredients

  • ¼ cup finely ground coffee
  • 1 ½ cups water
  • ¼ cup sugar

Method

  1. Brew coffee in a large stovetop espresso maker using ground coffee and water.
  2. Add sugar to a large measuring cup.
  3. Once a little bit of coffee has brewed, add 1 tablespoon to sugar and whisk vigorously for about 2 to 3 minutes until a smooth, pale brown and foamy paste forms. This form is call the espuma.
  4. When the coffee has brewed, pour coffee into espuma (foamy paste) while stirring to incorporate. Let the foamy cream rise to the top.
  5. Pour coffee into serving coffee cups while using a spoon to pour some of the foamy cream into the cups.
  6. Serve and enjoy.
