Turkish Coffee

The trick here is to brew coffee in the Turkish style using a special coffee pot called cezve. It uses no milk and offers an intense flavor with nice foam. Check out the process.

Ingredients
- 2/3 cup water
- 2 heaping tablespoons extra fine ground coffee
- Sugar to taste (optional)
Method
- Add water, coffee, and sugar into a cezve (Turkish brewing pot) and mix until coffee and sugar dissolve. Do not stir coffee again after this point.
- Place cezve on a stovetop over medium heat and brew for 1 to 3 minutes or until coffee rises and foams.
- Just before coffee starts boiling, remove from heat and skim foam on top into serving glasses.
- Return coffee to fire and let slowly foam again.
- Slowly pour coffee into the serving cups while allowing foam rise to top.
- Let coffee settle for a few minutes and serve.
