Caffè De Olla Mexican Brew Recipe
Author: Luxury Recipes
An olla—the traditional clay pot used to brew this Mexican drink—lends an earthy dimension to the brew. If you don’t have an olla, a regular saucepan still allows the texture and oil from the beans to give the brew extra body.

- 1oz (30g) medium-ground coffee
- In a saucepan over medium heat, bring 16fl oz (500ml) water, 2 cinnamon sticks, and 1 3⁄4oz (50g) piloncillo or dark brown sugar to a boil and simmer, stirring constantly until the sugar is dissolved.
