These sweet fingers flavored with warm spices have lots of festive flair due to their secret ingredient, white chocolate.

Ingredients

  • 3½ ounces unsalted butter (chopped)
  • ¾ cup golden syrup
  • ¾ cup brown sugar
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 2 eggs (beaten lightly)
  • ⅓ cup whole milk
  • 2 cups plain flour
  • 6⅓ ounces good-quality white chocolate (chopped)
  • Confectioner's sugar (to dust)

Method

  1. Preheat the main oven to 355 degrees F. Grease and using line an 8x11" slice pan.
  2. Add the butter, golden syrup, brown sugar, ground ginger, and cinnamon to a pan. Over moderate heat, and while stirring, melt the butter for 2-3 minutes, until the mixture is smooth and combined.
  3. Remove the pan from the heat and allow it to cool slightly. Add the lightly beaten eggs and milk and stir to combine.
  4. Into a large bowl, sift the flour, and add the white chocolate. Fold through the egg mixture and mix until incorporated. Transfer the mixture to the prepared slice pan.
  5. Transfer the pan to the preheated oven for 30- 35 minutes, until firm. Allow to cool completely in the pan.
  6. Dust with confectioner's sugar and slice into 18 even fingers.
