White Chocolate and Gingerbread Fingers

These sweet fingers flavored with warm spices have lots of festive flair due to their secret ingredient, white chocolate.

Ingredients
- 3½ ounces unsalted butter (chopped)
- ¾ cup golden syrup
- ¾ cup brown sugar
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 2 eggs (beaten lightly)
- ⅓ cup whole milk
- 2 cups plain flour
- 6⅓ ounces good-quality white chocolate (chopped)
- Confectioner's sugar (to dust)
Method
- Preheat the main oven to 355 degrees F. Grease and using line an 8x11" slice pan.
- Add the butter, golden syrup, brown sugar, ground ginger, and cinnamon to a pan. Over moderate heat, and while stirring, melt the butter for 2-3 minutes, until the mixture is smooth and combined.
- Remove the pan from the heat and allow it to cool slightly. Add the lightly beaten eggs and milk and stir to combine.
- Into a large bowl, sift the flour, and add the white chocolate. Fold through the egg mixture and mix until incorporated. Transfer the mixture to the prepared slice pan.
- Transfer the pan to the preheated oven for 30- 35 minutes, until firm. Allow to cool completely in the pan.
- Dust with confectioner's sugar and slice into 18 even fingers.
