Raspberry and White Chocolate Milkshake

Cool, creamy, and thick; everything a milkshake should be. This Christmas version is extra indulgent, thanks to a homemade raspberry syrup and melted white chocolate.

Ingredients
- 1 cup fresh raspberries
- 1 tsp lemon juice
- 2 tbsp granulated sugar
- 2 cups good-quality vanilla ice cream
- ¼ cup whole milk
- ¼ cup white chocolate (melted)
- Whipped cream (to garnish)
- Fresh raspberries (to garnish)

Method
- First, prepare the syrup. Add the raspberries, lemon juice, and sugar to a saucepan over moderate heat. Bring the mixture to a boil and mash the raspberries as it cooks.
- Turn the heat down to a simmer and cook for 2-3 minutes. Take off the heat and strain the mixture through a sieve. Discard any solids. Set the syrup aside to cool.
- When the syrup is cool, prepare the milkshake. Add the ice cream, milk, melted white chocolate, and raspberry syrup to a blender and blitz until smooth.
- Pour the mixture into a tall glass. Garnish with a swirl of whipped cream and a few fresh raspberries.
