Cool, creamy, and thick; everything a milkshake should be. This Christmas version is extra indulgent, thanks to a homemade raspberry syrup and melted white chocolate.

Ingredients


    Syrup:

  • 1 cup fresh raspberries
  • 1 tsp lemon juice
  • 2 tbsp granulated sugar

  • Milkshake:

  • 2 cups good-quality vanilla ice cream
  • ¼ cup whole milk
  • ¼ cup white chocolate (melted)
  • Whipped cream (to garnish)
  • Fresh raspberries (to garnish)

Method

  1. First, prepare the syrup. Add the raspberries, lemon juice, and sugar to a saucepan over moderate heat. Bring the mixture to a boil and mash the raspberries as it cooks.
  2. Turn the heat down to a simmer and cook for 2-3 minutes. Take off the heat and strain the mixture through a sieve. Discard any solids. Set the syrup aside to cool.
  3. When the syrup is cool, prepare the milkshake. Add the ice cream, milk, melted white chocolate, and raspberry syrup to a blender and blitz until smooth.
  4. Pour the mixture into a tall glass. Garnish with a swirl of whipped cream and a few fresh raspberries.
