Pork Chops with Coffee and White Chocolate Sauce

Ingredients
- 3 tbsp butter
- 3 tsp all-purpose flour
- 1 cup broth
- Salt (to taste)
- 2 ounces good-quality white chocolate (chopped)
- 3 tbsp butter
- 4 boneless pork chops
- Salt and black pepper (to season)
- 6 tbsp finely ground coffee
- Rice (cooked, to serve, optional)
- Fried plantains (to serve)

Method
- For the sauce, first, melt the butter in a small pan over moderate heat.
- Add the flour to the pan and mix well to combine.
- Pour in the broth while constantly stirring to combine and cook the flour.
- On low heat, cook the sauce for around 15 minutes while stirring regularly—taste and season with salt.
- Remove the pan from the heat, add the white chocolate, stirring until entirely melted.
- For the pork chops, in a nonstick pan, over moderate heat, melt the butter.
- Season the chops on both sides with salt and black pepper, then dip them into the coffee, coating well and evenly on both sides.
- Add the chops to the pan, and cook for 5 minutes, on each side, until cooked through.
- Serve and enjoy the pork chops with rice, fried plantains, and white chocolate sauce.
