Ingredients
- 4 ½ oz (125g) cocoa powder,5 ½ oz (150g) sugar
- 9fl oz (250ml) water
- 1 teaspoon vanilla flavoring
- In a medium saucepan, mix 4 1⁄2 oz (125g) cocoa powder, 51⁄2 oz (150g) sugar, and pinch of salt, if desired together.
- Add 9fl oz (250ml) water and bring to a boil over medium heat, whisking continuously. Allow to simmer for 5 minutes while stirring.
- Remove from the heat and mix in 1 teaspoon vanilla flavoring.
- Cool and transfer to a sterilized, airtight jar or bottle, and store in the fridge. It will keep for approximately two to three weeks.
- GINGERBREAD BUTTER - Mix 2 tablespoons of soft, lightly salted butter with 3 ½oz (100g) brown sugar, 1⁄4 teaspoon each of ground allspice, nutmeg, cinnamon, cloves, and 2 teaspoons of rum essence in a bowl. Use as a topping on coffees

Ingredients
- 1lb 2oz (500g) roughly chopped strawberries
- 8oz (225g) sugar
- 16fl oz (500ml) water.
- Place 1lb 2oz (500g) roughly chopped strawberries in a saucepan and pour over 16fl oz (500ml) water.
- Bring to a boil and simmer for 25 minutes. Skim off any foam that gathers on the surface.
- Remove from the heat and strain out the liquid without squeezing the strawberries.
- Add 8oz (225g) sugar to the liquid and bring to a boil while stirring. Simmer until the sugar dissolves, and skim off any foam that gathers on the surface.
- Cool and transfer to a sterilized, airtight jar or bottle, and store in the fridge. It will keep for approximately two weeks.

- 7oz (200g) sugar and 2fl oz (60ml) water
- 3 tablespoons unsalted butter and 1⁄2 teaspoon sea salt.
- 4fl oz (120ml) heavy cream
- 1 teaspoon vanilla extract
- Heat 7oz (200g) sugar and 2fl oz (60ml) water in a heavy-bottomed pan over medium heat, stirring continuously.
- Once it starts to bubble, stop stirring and simmer until it reaches 240˚F (115˚C). Remove from the heat and stir in 3 tablespoons unsalted butter and 1⁄2 teaspoon sea salt.
- Carefully add 4fl oz (120ml) heavy cream while whisking. Stir until it is smooth, then add 1 teaspoon vanilla extract and mix.
- Cool and transfer to a sterilized, airtight jar or bottle, and store in the fridge. It will keep for approximately two to three weeks.

- 1 tablespoon vodka, if desired
- In a large saucepan, bring 16fl oz (500ml) water to a boil over medium heat.
- Stir in 1lb 2oz (500g) white sugar until it dissolves. Remove from the heat.
- Cool and transfer to a sterilized, airtight jar or bottle, and store in the fridge. It will keep for approximately two weeks. Add 1 tablespoon vodka, if desired to double its shelf-life.

Ingredients
- 2 cups (500 ml) hot, fresh espresso or strong coffee
- 1 1/3 cups (350 g) sugar
- 1 vanilla bean, split lengthwise
- 1/3 cup (75 ml) dark roast coffee beans, cracked slightly
- A pinch of salt
- Combine the espresso, sugar, vanilla bean, coffee beans, and salt in a medium-size saucepan.
- Cook over low heat, stirring frequently, until the sugar is dissolved.
- Bring to a boil over medium-high heat and cook, without stirring, for about 4 minutes, or until thick and syrupy.
- Remove the saucepan from the heat and let cool completely.
- Strain the espresso mixture through a fine sieve into a small bowl.
- Discard the coffee beans and, if desired, set the vanilla bean aside for another use.
- Cover the syrup with plastic wrap and chill until ready to use. The syrup can be kept refrigerated for up to 1 month.
