Insieme Coffee Drink Recipe

This is Sammy Piccolo’s signature drink from the 2004 World Barista Championships, in Trieste, Italy. “Insieme” is Italian for “together,” which is symbolic of how coffee and the World Barista Championships bring people together.

Ingredients

• 1 egg yolk
• 3/4 ounce (12 g) sugar
• 1 ounce (15 g) grated bittersweet chocolate
• A pinch of curry
• 4 ounces (113 ml) milk
• 6 ounces (170 ml) hot, fresh espresso or strong coffee



Method

1. Whisk together the egg yolk, sugar, chocolate, curry, and milk in a bowl.
2. Pour the mixture into a steaming pitcher, and steam.
3. Divide the espresso evenly among four tempered glasses.
4. Pour the steamed milk over the shots of espresso.
5. Serve immediately.
