
Espresso Syrup Recipe

Another handy flavoring to have in the kitchen, it is also easy to prepare. This rich syrup can be used as a sweet flavoring in iced coffees (or on waffles, pancakes, or ice cream, too!).

Ingredients
- 3/4 cup (165 g) granulated sugar or vanilla sugar (see below)
- 1/4 cup (60 ml) water
- 4 ounces (113 ml) hot, fresh espresso or strong coffee
- Combine the sugar and water in a small saucepan, and bring to a boil. Lower the heat and simmer for 5 minutes.
- Remove from the heat and let cool for 1 minute.
- Stir in the espresso.
- Allow the syrup to sit for at least 30 minutes before using.
- Store the syrup in a sealed jar in the refrigerator. It will keep for several weeks (if you don’t tell anyone it’s there!).
- Wash and dry a vanilla bean, then push it into the middle of a 6–cup (1.5 L) container filled with granulated sugar. Set aside, covered, for 2 weeks. This is now vanilla sugar, with a unique delicate vanilla aroma and flavor. It can now be used for baking (substitute it for all or part of a recipe’s measurement of granulated sugar) or for sweetening just about anything.
